Mini Bake Potato Cupcakes

So what did McKee do with the potatoes we grew? We made mini bake potato cupcakes. The children thought they were very tasty and even those who were reluctant to try asked for a second piece and ate with obvious enjoyment.


Ingredients 

6 eggs, lightly beaten
2 small tomatoes, roughly chopped
300g new potatoes, cubed and boiled for 15 minutes
50g ham, chopped
50g frozen peas, defrosted

Method

1.Cook the potatoes, drain and stand for 1 minute.
2. Mix all other ingredients together.
3.Spoon a small amount into each cake case and add  some potatoes.
4.Cook in oven for 15-20 minutes, until risen and golden brown.
5. Serve with raw vegetable sticks.

The recipe did not give a temperature but we used quite a high one. This mixture made enough for the whole class. Why not have a try at home, you don't have to grow the potatoes first!
